Warm your belly, Chicken Tortilla Soup


Tortilla soup is simple, quick and clean. I use organic ingredients when possible. Cilantro gives this soup it's authentic mexican flavor and the chili warms your tummy up. Can be made the day before so the flavors are matured.

Ingredients:

  • I small onion, chopped

  • 3 cloves garlic, minced

  • 1 teaspoon chili flakes (for mild)

  • 1 teaspoon dried oregano

  • 1 x 15oz can diced tomatoes - drained

  • 4 cups chicken broth

  • 4 spring onions chopped (leave some for garnish)

  • 1 cooked corn - kernels removed

  • 1 green pepper, Anaheim - no seeds (for mild)

  • 1 x 15oz black beans - drained

  • 1/4 cup fresh cilantro - chopped

  • 2 cups cooked chicken - shredded

  • Salt and pepper to taste

  • Sliced avocado- garnish

  • Grated cheese - garnish

Instructions:

  • Cook onion and garlic until tender,

  • Bring broth to the boil, add all ingredients to broth. Simmer to release flavors.

  • Place tortilla chips in the bottom of the bowl ladel soup over, garnish with avocado, spring onion and cheese.

Serves 4
