10 Minute Risotto, No Way!


Get prepared! To make this delicious meal in 10 minutes, you need to get organized.

Make a batch of brown rice when you have time. I recommend short grain for its plumpness.

I used BBQ pork loin but you can use rotisserie chicken, bacon, salami use your imagination.

Chop and slow cook the vegetables in butter and olive oil until they release their flavor and juices. Warm the rice add vegetables, broth & pork, stir until liquid starts to be absorbed. Add the parmesan cheese, lightly stir and you are done.

Ingredients:

  • 1 cup cold cooked brown rice

  • 1 leek chopped and separated into rings

  • 5 Portabello mushrooms sliced

  • 1/4 cup vegetable broth

  • Parmesan cheese

  • Salt and pepper to taste

  • Butter and olive oil
