My friend gave me this home grown organic spahgetti squash, I had a craving for mediterranean food the end result was amazing! The cubed spagetti squash burst with texture with every bite I took, it surprised me and I could not wait to try another piece. The squash is a complex Carbohydrate giving me sustained energy all afternoon. I baked it for 40 minutes at 360, peeled it, chopped it into cubes. The tomato, mozzarella, olives, basil all soaked with balsamic and olive&flax

Breakfast, Yum Scrum! This is the only breakfast that gets me through the morning without being hungry and snacking. Pictured is a serving for two. It's warm, hearty and nutritious. What's in it? 1 cup rolled oats, water and vanilla almond milk to cover. 1 teaspn chia seeds 1 tablespn Flax meal and nuts (whatever you like) a few raisins, (I microwave the above for 5 minutes) .... Stir and add blueberries, chopped apple, grapes, I also had a peach for today. OMG!! Delicious.


You just got to love a trip to the farmers market
One of the things I enjoy more than anything is a the freshness of the fruit and veg' you only get from the farmers markets. It's really interesting to see the shapes and sizes, the range of color the food comes in, you can use your imagination to see what you can make with it.
