Polenta used to be considered peasant food, but not when cooked like this. Polenta is a low carbohydrate food rich in vitamin A and C making it a good source of the caroteinoids, lutein and zeaxanthin. These polenta fries are so satisfying parents and kids will love them. Make them as spicy or as salty as you like.
One roll of polenta
1/4 cup extra virgin olive oil
Teaspoon garlic salt
Teaspoon onion powder
Teaspoon Chili powder
Himalayan salt & pepper to taste
Open polenta roll and cut into steak-fries size and shape
Mix all spices, add olive oil
Baste the fries with the oil mixture.
Place on an oven try
When oven is hot, cook at 425oF for 20 minutes (220oC)
