Cashew, coconut & salmon! Yum Scrum. The flavor reminds me of Hawaii

This is my new favorite way to cook salmon.

 

What you'll need:

  • 1/4 cup of raw cashews

  • 1/4 cup coconut flakes

  • A little egg white

  • Olive oil

  • a little butter optional

 

Instructions: 

I pop the raw cashews and and coconut flakes in the blender, wiz it. Put a little egg white on the salmon to make it stick and broil it in butter and olive oil. You want the pan to be hot when you put the salmon on, to brown the crumbs, then you can turn down the heat. Cook for just 3 minutes on each side.
