Beets are treats

Beets pack a huge punch for health benefits they are antioxidant, anti inflammatory, detoxifying. High in folates, manganese, potassium to name just a few. I washed these organic beets then boiled, covered in water with 1/2 cup of Rice wine vinegar, 5 cloves, 1 teaspoon mustard seeds, 1 teaspoon pepper, 2 tablespoons brown sugar, 1 bay leaf, 1 small onion for 30 minutes. In the picture the beets have been cooked then soaked in cold water. Peeled by rubbing with my hands, the skins just rub off. Yum Scrum!!
